Large White (Yorkshire)

The backbone of the Australian commercial pork industry — fast-growing, prolific, and the most widely used breed in crossbreeding programs nationally.

About the Large White (Yorkshire)

The Large White, known in many countries including parts of Australia as the Yorkshire, is the single most influential pig breed in modern commercial pork production worldwide, and Australia is no exception. Developed in Yorkshire, England in the 19th century, the breed was exported globally and forms the maternal line in the great majority of commercial crossbred pigs raised in Australian intensive and outdoor-bred systems today, typically crossed with Landrace for the sow line and then to a terminal sire such as Duroc for finishing.

Large Whites are large, long-bodied, white-skinned pigs with erect ears and a slightly dished face. They are valued above all for maternal traits: large litter sizes, strong milk production, and good mothering ability, combined with reasonably fast growth and a lean, well-muscled carcase. For commercial Australian producers, Large White genetics (almost always as part of a cross rather than purebred) remain the standard starting point for a breeding herd.

For small-scale and hobby producers, purebred Large Whites are less commonly kept than crossbred stock, but they remain available through breed societies and specialist breeders for those wanting to maintain or work with the purebred line, including for 4-H and agricultural show purposes, which remain active in many Australian states.

Production

Large Whites are prized for large litter sizes (commonly 10 to 12 piglets, occasionally more from mature sows) and reliable milk production supporting strong piglet growth to weaning. Growth rate to market weight is fast under good nutrition, and the carcase dresses out lean with good muscle depth. As a maternal line, Large White genetics underpin the majority of commercial crossbred pork produced in Australia.

Care & Management

The thin, lightly pigmented skin of the Large White is genuinely vulnerable to sunburn and heat stress in full Australian sun — any Large White or Large White-cross pig kept outdoors needs reliable shade and, ideally, a wallow for cooling, particularly through summer in inland and northern regions. Otherwise the breed is straightforward to manage, adapting well to both indoor and well-shaded outdoor systems. Standard pig health and parasite management applies without breed-specific complications.
